Easy & Delicious: day 2

Breakfast cookies 



3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups uncooked quick-cooking oat 
1/4 cup skim milk 
1/2 cup raisins 
1 tsp vanilla
1 tsp cinnamon  
1 tbsp sweetener. 


Preheat oven to 350 degrees. Mix all ingredients in a bowl really well. Let this mixture stand for at least 5 minutes to let the oats become good and hydrated. Heap the dough by teaspoonfuls onto a greased cookie sheet. Bake for 15-20 minutes.


*I love this recipe because we usually always have all the ingredients on hand, plus they are quite good and you can feel good about yourself eating them. I make them with whole milk, a little less raisins than it calls for, (or you could use craisins) and I also add a bit of almond -extract. (about 1 tsp-and I think this makes them!) For sweetener I have tried making them without any, and I've tried using brown sugar. I liked the brown sugar version best, but for health's sake you can totally make them with either no sweetener or use something like agave nectar.

  1. first, i LOVE your pic of these cookies! that (mint?) leaf adds that extra "oomf" factor. :) second, i wonder if in place of the oats, one could use crushed almonds?

    1. Thank you! Yes, mint leaves, good eye!!! :) You probably could... almonds are amazing anyways, besides the fact that I'm assuming using them would make this a gluten free recipe? Have you ever replaced oats with them before? Let me know if you try it how it comes out!! :)
