Cranberry BBQ Meatballs
The fun thing about this one is that you can use them so many different ways... (Also, when Drew just saw me pull up this photo he said "MEATBALLS! How can I get them out of there to eat??!")
Ingredients:
2 lbs ground beef
1 6 oz package of stove top stuffing mix for chicken
1 cup water
2 eggs
1 bottle kraft original bbq sauce
1 can cranberry sauce
This one takes a little bit of prep work... heat oven to 400 degrees. Line 2 baking trays with aluminum foil sprayed with cooking spray. Mix meat with stuffing mix, eggs and water and shape into balls. Should make about 50. Bake for 16 minutes. While they are baking melt cranberry sauce and bbq sauce together in a sauce pan on top of the stove. When meatballs are finished transfer to crockpot and pour sauce over. Keep warm. (You really only need to put them into a crockpot if you are traveling somewhere with them. If you are just eating them at home you can put them into a serving dish and pour the sauce over.)
So far we have had them by themselves with several sides (we like green beans, scalloped potatoes, or broccoli w/ cheese sauce...), over pasta (we used egg noodles), and on sub rolls with mozzarella cheese. All three ways are yummy.
This recipe is one I found on kraft and tried early in our marriage. All three boys love it.
One more note to mention... The photo above is not fancy or staged in any way. But the hidden beauty of it lies in the fact that half of the meatballs are in a tupper ware about to go into the freezer to be pulled out for a dinner on a day when I don't feel like cooking. And they will be equally delicious all over again :) Since this recipe uses two pounds of meat it is perfect to cut in half this way. Enjoy!
