Crockpot Week: Day 5

Chili w/ Black beans and corn


This is the recipe that made me love chili.

Ingredients:

2 lbs cooked ground beef (or turkey)
2 cans black beans
1 can diced tomatoes
1 small can chopped green chillies
1/2 onion chopped and cooked
3/4 cup salsa
1 tsp minced garlic
1 tsp dried cilantro
1 cup corn
salt & pepper to taste

Mix everything together in a crock pot and simmer for 4-5 hrs, adding corn for the last hour. Serve with sour cream & cheddar cheese and choice of chips (tortilla or fritos are our favorites) Variation: can make with leftover roast chicken and substitute one can of northern beans for a can of black beans.

Our friends Clay and Lindsay brought us this meal after we had Isaiah, and I fell in love with it immediately. They made it with a side of corn bread and it was SO good!! Thank you Lindsay for passing the recipe on to me and allowing me to share it with everyone!! It's one of our favorites for sure :)
